Lemon Banana Chocolate Chip Muffins
Today I am sharing a super easy breakfast muffin for your family that your kiddos will be sure to love. My children love when I bake these and they are delicious! I once made these for an essential oil gathering and our guests adored them. They are so warm and yummy and the banana interacts with the lemon in just the right combination.
While these do of course have bananas in them, let’s just say that these aren’t exactly healthy! But they are easy and that counts for something. We like using Trader Joe’s chocolate chips as their ingredients are a bit better than other brands AND most of all, they are large chocolate chips so they make for some warm, gooey muffins!
Ingredients:
1 3/4 cups flour
1 egg
1 heaping tbs baking powder
1 cup chocolate chips (or I mean just use the whole bag!)
***You can substitute blueberries in place of chocolate chips
Dash of Salt (I never measure this)
1/2 cup granulated sugar
1 tsp vanilla extract (although with the lemon oil you don’t actually need this)
4-5 drops Young Living Vitality Lemon Oil
1/2 Cup Sunflower Oil (or vegetable if that’s all you have)
1/3 - 1/2 cup of milk (start with 1/3 and then add more as needed for consistency)
2-3 bananas
Directions:
Mix all of your dry ingredients in your mixer with the egg.
Add in 4-5 drops of your Lemon Vitality Oil
Mix in 2-3 bananas (use more for more of a banana taste)
Lastly, mix in your chocolate chips. Live life on the edge and just dump the whole bag, okay?
Bake at 350 until golden brown on top, around 12-14 minutes
Cool off and enjoy!
The best part about these is that they are a breakfast favorite and a snack time favorite in our home. Whatever is left from the morning is typically eaten again in the afternoon. Bake them for the kids, bake them for some guests and keep them around because they will be a favorite!
